Alton Brown’s Blueberry Muffins

Alton Brown’s blueberry muffins added an extra dash of harmony to my marriage. My husband is a self-described “blueberry muffin connoisseur” and was unhappy with every single muffin recipe I tried for almost two years – until I made this one. Now that we have a toddler running around the house I have two men in my life who think these muffins are the best thing this side of awesome.

I follow AB’s recipe pretty much to the T. The minor changes I do make include substituting olive oil for vegetable oil, reducing the 1 tablespoon of flour mix added to the berries to 1/2 tablespoon, and baking the muffins in jumbo tins (which requires a 5-10 min increase in baking time).     There is a house up the block from us that sells homemade icies for 15 and 30 cents, in little plastic cups, mostly to children. I send my kids to buy me the coconut flavor – it appears to have flecks of nutmeg in it. They only speak Spanish and I only speak English, so I have not tried to ask for the recipe.

    Definitely Peach Cream Popsicles! Not only are peaches the essence of summer for me, but my nickname is Peach!

    I’m thinking back to the first summer I lived back in New York . . . I lived in Hastings-on-Hudson and used to walk up to Dobbs Ferry to shop at the Grand Union grocery store there. That was the first time I’d ever tried Haagen Daz ice cream, and the flavor was (the now defunct) Elberta Peach. Oh my! It was AMAZING! My sweetie and I couldn’t bear the thought of it melting on the long walk back home, so we bravely ate the entire pint :-) . . .

    Perhaps Peach Cream Popsicles can help me relive the magic . . . Yummm!

    I think a combination of peach cream and coconut could be delicious – fill the mold halfway with coconut, let it set in the freezer for a bit, and then fill it the rest of the way with peach cream.

    Definitely coconut! My husband and daughter both hate anything coconut, so if I made them, I could eat them all by my self.

    BTW, as a coincidence, I was making blueberry pancakes on the weekend and when I turned on the TV to watch Food Network Canada, who should be on but good old Alton making all things (including those great muffins) blueberry. I was thrilled because blueberries are my all time favourite berry.

    Wow! Those blueberry muffins look scrumptious and fruity ( Much unlike those at McDonald’s; they tend to skimp-out on the blueberries). Oh and as for the popsicle recipe, I’m a coconut gal myself. I love anything coconuty… especially in the summer-time, kind of makes me feel like I’m on a tropical vacation somewhere :)
